  • 4 pieces boneless, skinless chicken breasts Uniform size for even cooking
  • 1 tablespoon olive oil For cooking the chicken
  • 1 cup chicken broth For the sauce
  • 8 ounces Boursin cheese Garlic and herb flavor recommended
  • 1 cup heavy cream Can substitute with milk for a lighter option
  • 2 tablespoons fresh parsley, chopped For garnish
  • 2 tablespoons garlic, minced Fresh garlic preferred
  • 1 teaspoon lemon juice
  • Salt, to taste
  • Black pepper, to taste

Preparation

  • Season the chicken breasts with salt and black pepper on both sides.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.

Cooking the Sauce

  • In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in the chicken broth and bring to a gentle simmer, scraping any browned bits from the skillet.
  • Lower the heat and whisk in the Boursin cheese until it melts smoothly into the broth.
  • Stir in the heavy cream and lemon juice, letting the mixture simmer for a few more minutes until it thickens slightly.
  • Return the chicken breasts to the skillet, ensuring they are well coated with the creamy sauce. Heat through for an additional 2-3 minutes.

Serving

  • Sprinkle with fresh parsley before serving.
  • Arrange on a serving platter, drizzling the remaining sauce generously over the chicken.
  • Serve with mashed potatoes, risotto, or crusty bread.

Notes
