  • 1 sheet puff pastry, thawed Keep refrigerated until ready to use.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Heat a tablespoon of olive oil in a skillet over medium heat. Add the chopped onions and cook until they become translucent, approximately 3-4 minutes.
  • Stir in the minced garlic and cook for another minute. Add the chopped mushrooms and cook until they release their moisture and turn golden brown, about 5-7 minutes.
  • Remove the skillet from heat and stir in the cream cheese, parsley, thyme, salt, and pepper. Mix until smooth and set aside.
  • Season the chicken breasts with salt and pepper. In the same skillet, heat more olive oil and cook the chicken until browned, about 3-4 minutes on each side. Remove the chicken and let it cool slightly.
  • Roll out the puff pastry on a lightly floured surface to ensure it’s large enough to wrap around the chicken.

Assembly and Baking

  • Place the chicken breasts in the center of the rolled-out pastry. Spoon the mushroom and cream cheese mixture over the top of each chicken breast.
  • Fold the pastry around the chicken, ensuring it’s tightly sealed. Trim any excess pastry and press the edges to secure them.
  • Place the wrapped chicken on the prepared baking sheet. Brush the top with beaten egg.
  • Bake for 25-30 minutes or until the pastry is a rich golden color.
  • Remove from the oven and let it rest for 5-10 minutes before slicing and serving.

Notes
