For the Chicken and Sauce

  • 2 lbs chicken breasts Fresh organic chicken preferred
  • 1 large onion, sliced Adds sweetness and flavor
  • 4 cloves garlic, minced Enhances the flavor
  • 1 can (15 oz) diced tomatoes Adds moisture and flavor to the sauce
  • 2-3 pieces chipotle peppers in adobo sauce Adjust according to desired spiciness
  • 1 tsp cumin Adds earthy flavor
  • 1 tsp oregano Contributes to the flavor profile
  • to taste Salt and pepper For seasoning

For Serving

  • as needed Tortillas or rice To serve the dish

Instructions
 

Preparation

  • Place the chicken breasts in the slow cooker.
  • In a separate bowl, combine the sliced onion, minced garlic, diced tomatoes, chipotle peppers, cumin, oregano, salt, and pepper to create the sauce.
  • Pour the sauce mixture over the chicken in the slow cooker, coating it generously.

Cooking

  • Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender.
  • Once cooked, shred the chicken using two forks and mix it back into the sauce.

Serving

  • Serve the Chicken Tinga in warm tortillas or over rice, adding garnishes as desired.
