  • 2 cups cooked rice (white, brown, or jasmine) Base of the bowl.
  • 1 pound boneless, skinless chicken breasts Protein source.
  • 2 medium sweet potatoes, peeled and cubed Adds natural sweetness.
  • 2 tablespoons olive oil Used for roasting and cooking.
  • 1 teaspoon garlic powder For flavor.
  • 1 teaspoon smoked paprika Adds depth to flavor.
  • Salt and pepper to taste Basic seasoning.
  • 1 teaspoon dried thyme or rosemary Herb seasoning.
  • 1 cup broccoli florets (optional) For added nutrition.
  • Chopped fresh parsley for garnish (optional) Enhances visual appeal.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, garlic powder, smoked paprika, salt, and pepper.
  • Spread the sweet potatoes evenly on a baking sheet and roast for about 25-30 minutes, or until tender and lightly caramelized.

Cooking Chicken

  • While the sweet potatoes roast, season the chicken breasts with salt, pepper, and the dried thyme or rosemary.
  • Heat the remaining tablespoon of olive oil in a skillet over medium heat.
  • Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked and golden brown.
  • Check for doneness by ensuring the internal temperature reaches 165°F (75°C).
  • If adding broccoli, include it in the skillet during the last 5 minutes of cooking the chicken to allow it to steam slightly.
  • Once the chicken is done, remove it from the skillet and let it rest for a few minutes before slicing it into bite-sized pieces.

Assembly

  • To serve, layer the rice at the bottom of a bowl, topped with roasted sweet potatoes and sliced chicken.
  • Add broccoli if using and garnish with chopped parsley if desired.

Notes

For variations, consider swapping chicken for shrimp or tofu, or use quinoa instead of rice. Using different vegetables like zucchini or bell peppers can also enhance the dish.
