Main Ingredients

  • 1 pound Chicken breast, cut into small pieces
  • 1 tablespoon extra virgin olive oil
  • to taste Salt
  • to taste Ground fresh black pepper
  • 3 cloves garlic, minced
  • 1 medium sweet potato, peeled and diced
  • 1/2 cup chicken broth or water
  • 1/2 pound fresh asparagus, cut diagonally into 1 and 2-inch pieces
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon crushed red pepper

Preparation

  • Start by cutting the chicken breast into small, bite-sized pieces. Season the chicken with salt and freshly ground black pepper.

Cooking Chicken

  • In a large skillet over medium heat, pour in the extra virgin olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Add the seasoned chicken to the skillet and cook for about 7-10 minutes until no longer pink.

Cooking Sweet Potatoes

  • Remove the cooked chicken from the skillet and set aside. In the same skillet, add the diced sweet potatoes and pour in the chicken broth or water. Cover and let cook for around 7-10 minutes.

Adding Asparagus

  • Once the sweet potatoes are tender, add the asparagus pieces to the skillet and cook for another 4-5 minutes.

Combining Ingredients

  • Return the cooked chicken to the skillet, stirring to combine. Adjust seasoning to taste.
