Ingredients

  • 2 pieces boneless, skinless chicken breasts (about 1 pound)
  • 3 tablespoons olive oil
  • 2-3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon salt

For the Tacos

  • 8 small corn tortillas
  • 1 medium onion, diced
  • 1 cup fresh cilantro, chopped
  • 2 pieces limes

Instructions
 

Preparation

  • In a bowl, combine olive oil, minced garlic, cumin, chili powder, and salt to create a flavorful marinade.
  • Add the chicken breasts to the marinade, ensuring they are evenly coated, cover with plastic wrap, and let it sit for at least 30 minutes.

Grilling

  • Preheat your grill to medium-high heat.
  • Remove chicken from marinade and place on the grill. Cook each side for about 6-8 minutes until the internal temperature reaches 165°F.
  • Transfer the grilled chicken to a cutting board and let it rest for a few minutes.

Taco Assembly

  • Warm the corn tortillas on the grill or in a hot, dry pan for about 30 seconds on each side.
  • Slice the rested chicken into strips.
  • Assemble the tacos by placing strips of grilled chicken in a warm tortilla, topped with diced onion and chopped cilantro.
  • Finish with a squeeze of fresh lime juice and serve immediately.
