Chicken Scampi with Garlic Parmesan Rice

Ingredients
  

For the Chicken

  • 2 pieces boneless skinless chicken breasts Perfectly seasoned for flavor.
  • 1 tablespoon olive oil For searing the chicken.
  • 1 teaspoon salt
  • ½ teaspoon black pepper Adjust to taste.
  • ½ teaspoon paprika Adds color and flavor.
  • 3 tablespoons butter Used in the sauce.
  • 4 cloves garlic Minced for rich flavor.
  • ½ cup chicken broth For deglazing.
  • 2 tablespoons lemon juice Adds brightness.
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped parsley For garnish.
  • ½ teaspoon red pepper flakes Optional for heat.

For the Garlic Parmesan Rice

  • 1 tablespoon butter To sauté the garlic.
  • 2 cloves garlic Minced.
  • 1 cup white rice For the base of the dish.
  • 2 cups chicken broth To cook the rice.
  • ½ cup freshly grated parmesan cheese For creaminess and flavor.
  • 1 tablespoon chopped parsley For garnish.

Instructions
 

Preparation

  • Season chicken breasts with salt, black pepper, and paprika.
  • Heat olive oil in a large skillet over medium heat.
  • Sear the chicken for 5-6 minutes on each side until golden brown and fully cooked.
  • Remove chicken from skillet and set aside.

Making the Sauce

  • Add butter to the skillet and then minced garlic; sauté for 1-2 minutes until fragrant.
  • Deglaze the skillet with chicken broth and lemon juice, scraping up browned bits.
  • Add lemon zest and simmer for 3-4 minutes.
  • Return chicken to the skillet and spoon sauce over it; simmer for another 2-3 minutes.

Preparing the Rice

  • In another saucepan, melt butter over medium heat and sauté garlic for about 1 minute.
  • Stir in white rice, toasting it for 1 minute.
  • Add chicken broth, bring to a boil, reduce heat and simmer covered for 15 minutes.
  • Remove from heat, stir in parmesan cheese and parsley.

Serving

  • Plate by placing garlic parmesan rice, top with chicken, and drizzle with garlic sauce.
  • Garnish with extra parsley and red pepper flakes if desired.

Notes
