Ingredients
  

Pasta and Vegetables

  • 12 ounces pasta (your choice)
  • 2 medium zucchinis, sliced
  • 2 cups cherry tomatoes, halved

Protein

  • 1 pound chicken sausages

Flavorings

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Garnish and Serving

  • Fresh basil for garnish (optional) adds freshness to the dish
  • Grated Parmesan cheese for serving (optional) adds creaminess and flavor

Instructions
 

Cooking the Pasta

  • Cook the pasta according to the package instructions until al dente. Reserve about 1 cup of the pasta cooking water before draining and set the pasta aside.

Cooking the Sausages and Vegetables

  • In a large skillet, heat the olive oil over medium heat. Add the chicken sausages and cook until browned on all sides, about 8-10 minutes, breaking them into bite-sized pieces as they cook.
  • Once the sausages are cooked through, add the minced garlic and cook for about 1 minute until fragrant.
  • Stir in the sliced zucchini and halved cherry tomatoes. Season with salt, pepper, dried basil, and oregano. Cook for another 5-7 minutes until the vegetables soften.

Combining the Ingredients

  • Add the reserved pasta water and cooked pasta to the skillet. Toss everything together to coat the pasta and allow the flavors to meld. Adjust the seasoning if necessary.

Serving

  • Serve immediately, garnished with fresh basil and a sprinkle of grated Parmesan cheese, if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for longer storage. Reheat on the stove with a splash of water or olive oil to prevent drying out.
