Ingredients
  

  • ¾ cup light mayonnaise
  • a pinch dried ginger
  • ½ tsp. salt
  • 3 cups cooked chicken (or 3 cans of chicken)
  • 1 ½ cups red seedless grapes (halved)
  • 1 cup sliced celery
  • cup sliced green onion
  • 1 cup chopped pecans

Instructions
 

  • In a large mixing bowl, combine mayonnaise, dried ginger, and salt. Stir until smooth.
  • Add the cooked chicken to the bowl, chopping it into bite-sized pieces if needed.
  • Halve the red seedless grapes and add them to the bowl.
  • Slice the celery and green onion, then add them to the mixing bowl.
  • Chop the pecans roughly and fold them into the salad.
  • Gently stir all ingredients until well combined, being careful not to mash the grapes.
  • Taste and adjust seasoning if needed. Serve immediately on lettuce leaves, in sandwiches, or enjoy straight from the bowl.
