  • 2 cups cooked chicken, diced Leftover rotisserie chicken works well.
  • 1 box Rice-A-Roni (chicken flavor)
  • 1 can cream of mushroom soup You can substitute with other cream soups if desired.
  • 1 cup milk
  • 1 cup shredded cheese (optional) Try different cheeses for variety.
  • 1 cup mixed vegetables (optional) Frozen vegetables are a convenient option.
  • Salt and pepper to taste Season according to your preference.

Preparation

  • Preheat the oven to 350°F (175°C).
  • Prepare the Rice-A-Roni according to the package instructions.
  • In a large mixing bowl, combine the cooked chicken, prepared Rice-A-Roni, cream of mushroom soup, and milk. If using mixed vegetables, add them now. Stir until well blended.
  • Season the mixture with salt and pepper to taste.
  • Transfer the mixture to a greased casserole dish, distributing it evenly.
  • If using cheese, sprinkle half on top of the casserole mixture and reserve the other half for later.
  • Bake for 25-30 minutes or until heated through and bubbly.
  • Let the casserole cool for a few minutes before serving.

Notes
