  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 2 cups potatoes, diced
  • 4 cups chicken broth
  • 1 cup heavy cream For a lighter option, consider using half-and-half.
  • 1 cup frozen peas
  • 1 tsp thyme Fresh thyme preferred.
  • 1 tsp garlic powder
  • 1 cup biscuit dough (optional) For added comfort and traditional pot pie flavor.

Preparation

  • Choose your preferred cooking method: Instant Pot, crockpot, or stovetop.
  • Add diced chicken, carrots, celery, onion, and potatoes to your pot.
  • Sprinkle thyme, garlic powder, salt, and pepper over the ingredients.
  • Pour in the chicken broth, mixing well to combine all ingredients.

Cooking

  • For Instant Pot, seal the lid and cook on high pressure for about 10 minutes.
  • In a crockpot, let it cook on low for 6 to 8 hours.
  • If using stovetop, simmer for around 30 minutes, until chicken and vegetables are tender.

Finishing Touches

  • Stir in heavy cream and frozen peas for a creamy texture.
  • If desired, drop spoonfuls of biscuit dough into the soup and simmer until cooked through.
  • Serve hot, garnished with fresh herbs if liked.
