  • 2 boneless skinless chicken breasts
  • ½ cup all-purpose flour for dredging
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 lemon juiced and sliced
  • 2 tablespoons capers drained
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 2 tablespoons fresh parsley chopped

Prep the Chicken:

  • Start by gently pounding the chicken breasts to an even thickness, about ½ inch thick. This helps them cook evenly and stay juicy. Once done, season both sides of the chicken breasts with salt and pepper. Dredge them lightly in the flour, shaking off any excess. This will give them a nice, crispy crust when cooked.

Cook the Chicken:

  • Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for about 3-4 minutes per side or until they’re golden brown and cooked through. Transfer the cooked chicken to a plate and set aside.

Make the Sauce:

  • In the same skillet, reduce the heat to medium. Add the butter and let it melt, scraping up any browned bits left in the pan. Add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth, lemon juice, and lemon slices, stirring to combine. Let the sauce simmer for about 2-3 minutes, allowing it to reduce slightly.

Add Capers and Finish:

  • Stir in the capers and return the chicken to the skillet, spooning some of the sauce over the top. Let the chicken simmer in the sauce for another 2-3 minutes, allowing the flavors to meld together.

Garnish and Serve:

  • Once the chicken is fully cooked and coated in the delicious lemon-caper sauce, remove it from the heat. Sprinkle with fresh parsley for a burst of color and flavor. Serve it hot and enjoy!
