Ingredients
  

Chicken and coating

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Sauce and garnish

  • 1 cup marinara sauce
  • 1 cup low-fat cottage cheese
  • to taste Fresh basil or parsley, for garnish

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a shallow bowl, combine breadcrumbs, grated Parmesan cheese, garlic powder, dried oregano, salt, and black pepper.
  • Take the chicken breasts and dip them into the breadcrumb mixture, ensuring both sides are well coated.
  • Lay the breaded chicken on a baking sheet lined with parchment paper.

Cooking

  • Bake the chicken for 25-30 minutes, checking for doneness.
  • While the chicken is baking, heat the marinara sauce until warm.

Assembly

  • Divide the cottage cheese among serving bowls and spoon the warm marinara sauce over it.
  • Place the baked chicken on top of the cottage cheese and sauce, and garnish with fresh basil or parsley.
