For the Soup

  • 2 tablespoons olive oil For sautéing vegetables
  • 1 cup onion, diced Adds flavor and aroma

Preparation

  • Warm the olive oil in a large pot over medium heat.
  • Add the diced onion, sliced carrots, and sliced celery. Sauté for about 5 minutes until softened.
  • Stir in the minced garlic and cook for an additional minute.
  • Pour in the chicken broth and bring the mixture to a gentle boil.
  • Add the cooked, shredded chicken and egg noodles. Stir well.
  • Sprinkle in the dried thyme, salt, and pepper. Stir thoroughly.
  • Reduce the heat and let the soup simmer for about 10 minutes, until the noodles are tender.
  • Taste and adjust the seasoning as needed before serving.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 3 months. Reheat gently on the stove.
