Ingredients
  

For the chicken and bowls

  • 1 lb boneless, skinless chicken thighs or breasts Choose fresh, high-quality chicken.
  • 2 tbsp olive oil
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste Salt and pepper
  • 1 cup cooked rice, quinoa, or your favorite grain Optional
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion thinly sliced
  • 1/4 cup fresh parsley, chopped

For the tzatziki sauce

  • 1 cup Greek yogurt
  • 1/2 cucumber grated and squeezed
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill or mint Optional
  • to taste Salt and pepper

Instructions
 

Marinate the Chicken

  • In a mixing bowl, combine the olive oil, dried oregano, garlic powder, onion powder, salt, and pepper. Add the chicken thighs or breasts, ensuring they are well-coated in the marinade. Let it marinate for at least 30 minutes, or up to 4 hours for enhanced flavor.

Prepare the Tzatziki Sauce

  • In another bowl, mix together the Greek yogurt, grated cucumber, minced garlic, lemon juice, and if desired, fresh dill or mint. Season with salt and pepper. Stir until well combined and refrigerate to allow flavors to meld.

Cook the Chicken

  • Heat a skillet or grill to medium-high heat. Add the marinated chicken pieces and cook for about 6–8 minutes on each side until the internal temperature reaches 165°F. Remove from heat and let rest before slicing into bite-sized pieces.

Assemble the Bowls

  • In each bowl, layer a base of rice or quinoa, if using. Add the sliced chicken, cherry tomatoes, diced cucumber, and thinly sliced red onion. Top with tzatziki sauce and sprinkle with fresh parsley.

Serve and Enjoy

  • Serve immediately for the best experience, or store components separately for meal prep.
