  • 1 pound chicken breast, cooked and shredded Use freshly cooked chicken or leftover rotisserie chicken.
  • 1 package (16 oz) potato gnocchi Store-bought gnocchi is convenient, but homemade can enhance the texture.
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth Can substitute with vegetable broth for a vegetarian option.
  • 1 cup heavy cream Can substitute with milk or non-dairy alternative for a lighter option.
  • 2 cups spinach Can replace with other greens like kale or Swiss chard.
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions
 

Preparation

  • Heat oil in a large pot over medium heat and add diced onions, carrots, and celery. Sauté until softened, about 5 minutes.
  • Stir in minced garlic and continue cooking for 1 more minute.

Cooking

  • Pour in the chicken broth and raise the heat to bring it to a boil.
  • Gently add the potato gnocchi and cook according to package instructions until they float to the surface.
  • Add shredded chicken and heavy cream, stirring to combine.
  • Fold in fresh spinach and Italian seasoning, allowing to simmer for a few minutes until spinach wilts.
  • Season with salt and pepper to taste before serving.

Notes
