- Chicken boneless, skinless breasts or thighs – 1 lb
- Bell Peppers red, yellow, or green – 2, sliced
- Onion yellow or red – 1, sliced
- Fajita Seasoning – 2 tbsp
- Olive Oil – 2 tbsp
- Tortillas flour or corn – 8 small
- Lime – 1 cut into wedges
Optional Toppings:
- Sour Cream – 1/2 cup
- Guacamole – 1/2 cup
- Salsa – 1/2 cup
- Shredded Cheese cheddar or Monterey Jack – 1/2 cup
Cook the Veggies
In the same skillet, add the remaining tablespoon of olive oil. Toss in the sliced bell peppers and onion. Sauté for 3-4 minutes, or until they are tender but still slightly crisp. If you like a bit more char, cook them a little longer.
Combine the Chicken and Veggies
Serve
Spoon the chicken and veggie mixture onto the warm tortillas. Squeeze a little fresh lime juice over the top and serve with your choice of toppings like sour cream, guacamole, salsa, or cheese.
