Ingredients
  

  • Chicken boneless, skinless breasts or thighs – 1 lb
  • Bell Peppers red, yellow, or green – 2, sliced
  • Onion yellow or red – 1, sliced
  • Fajita Seasoning – 2 tbsp
  • Olive Oil – 2 tbsp
  • Tortillas flour or corn – 8 small
  • Lime – 1 cut into wedges

Optional Toppings:

  • Sour Cream – 1/2 cup
  • Guacamole – 1/2 cup
  • Salsa – 1/2 cup
  • Shredded Cheese cheddar or Monterey Jack – 1/2 cup

Instructions
 

Prepare the Chicken

  • Slice the chicken breasts or thighs into thin strips, about 1/2 inch wide. This helps the chicken cook evenly and absorb all the flavorful seasoning.

Season the Chicken

  • In a bowl, toss the chicken strips with 1 tablespoon of fajita seasoning. Ensure each piece is coated well. You can add a pinch of salt and pepper to taste.

Sauté the Chicken

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes, or until the chicken is fully cooked and lightly browned. Remove the chicken from the skillet and set it aside.

Cook the Veggies

  • In the same skillet, add the remaining tablespoon of olive oil. Toss in the sliced bell peppers and onion. Sauté for 3-4 minutes, or until they are tender but still slightly crisp. If you like a bit more char, cook them a little longer.

Combine the Chicken and Veggies

  • Return the cooked chicken to the skillet with the veggies. Sprinkle the remaining tablespoon of fajita seasoning over everything and toss to combine. Cook for an additional 2 minutes, allowing the flavors to meld together.

Warm the Tortillas

  • While the chicken and veggies finish cooking, warm your tortillas. You can do this by placing them in a dry skillet over low heat for about 30 seconds on each side or by wrapping them in a damp paper towel and microwaving them for 20-30 seconds.

Serve

  • Spoon the chicken and veggie mixture onto the warm tortillas. Squeeze a little fresh lime juice over the top and serve with your choice of toppings like sour cream, guacamole, salsa, or cheese.
