  • 1 pound chicken breast, cooked and shredded Use leftover roasted chicken or rotisserie chicken for extra flavor.
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 pieces bell peppers (any color), sliced Adjust colors for variety.
  • 3 cloves garlic, minced
  • 1 can (15 oz) black beans, rinsed and drained Can substitute with other beans like kidney or pinto.
  • 1 can (15 oz) diced tomatoes, undrained
  • 4 cups chicken broth Use gluten-free chicken broth if needed.
  • 2 teaspoons chili powder Adjust based on spice preference.
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper Adjust to taste.
  • 1 medium lime, juiced Fresh lime juice enhances flavor.

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and sliced bell peppers. Sauté for about 5 minutes until the vegetables soften.
  • Stir in the minced garlic and cook for another minute until fragrant.

Cooking

  • Add the cooked and shredded chicken, followed by the black beans and diced tomatoes into the pot.
  • Pour in the chicken broth and stir everything together, bringing it to a gentle simmer.
  • Sprinkle in the chili powder, cumin, paprika, salt, and pepper, mixing well.
  • Allow the soup to simmer for about 20 minutes for the flavors to meld together.
  • Remove from heat and stir in the lime juice. Adjust seasoning as needed.

Serving

  • Ladle into individual bowls, garnishing with fresh cilantro.
  • Add a dollop of sour cream or Greek yogurt, and serve with tortilla chips and sliced avocado if desired.
