Ingredients
  

For the Chicken

  • 1 pound boneless, skinless chicken breast, sliced into thin strips
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional for heat)
  • to taste Salt and black pepper

For the Bowl

  • 1 cup cooked brown rice
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 red onion, thinly sliced
  • 1 lime, juiced
  • to taste Fresh cilantro, chopped, for garnish
  • as desired Avocado slices for topping
  • as desired Sour cream for topping (optional)
  • as desired Salsa for topping (optional)

Instructions
 

Preparation

  • In a mixing bowl, combine the chili powder, paprika, ground cumin, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Add the sliced chicken breast and the olive oil. Mix well, ensuring the chicken is fully coated in the spice blend.

Cooking

  • Heat a large skillet over medium-high heat. Once hot, add the seasoned chicken strips to the skillet. Let them cook for about 5 to 7 minutes, stirring occasionally until the chicken is browned and cooked through.
  • Remove the chicken from the skillet and set it aside.
  • In the same skillet, add the thinly sliced red, green, and yellow bell peppers along with the sliced red onion. Sauté for about 5 minutes or until they are tender yet still crisp.
  • Return the cooked chicken to the skillet and squeeze the lime juice over the mixture. Stir well to combine and cook for an additional 2 minutes.

Assembly

  • Start with a base layer of cooked brown rice in each bowl. Top it with the savory chicken and sautéed pepper mixture.
  • Add avocado slices on top and sprinkle fresh cilantro for a bright finish. Serve with sour cream and salsa on the side, if desired.

Notes

Feel free to customize your bowls with more spicy toppings or additional vegetables to match your preferences. Marinating the chicken longer enhances the flavor.
