- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup white wine optional, but adds depth
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup lump crab meat fresh or canned
- 1/4 cup fresh parsley chopped (for garnish)
- 1/4 cup shredded Parmesan cheese
Cook the Chicken:
Heat 1 tablespoon of olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
Once the skillet is hot, add the chicken breasts and cook for 4-6 minutes on each side, until golden brown and cooked through (internal temperature should reach 165°F/74°C).
Remove the chicken from the skillet and set aside, keeping it warm.
Make the Sauce:
In the same skillet, add ½ cup of chicken broth and, if using, ½ cup of white wine. Let it simmer for 1-2 minutes to reduce slightly.
Stir in ½ cup of heavy cream, 1 tablespoon of Dijon mustard, and 1 tablespoon of lemon juice. Cook for another 2-3 minutes until the sauce thickens.
Combine Chicken and Sauce:
Return the cooked chicken breasts to the skillet, spooning the creamy crab sauce over the top.
Let everything simmer together for another 2-3 minutes, ensuring the chicken is fully coated in the sauce.
