Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup white wine optional, but adds depth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup lump crab meat fresh or canned
  • 1/4 cup fresh parsley chopped (for garnish)
  • 1/4 cup shredded Parmesan cheese

Instructions
 

Season the Chicken:

  • Season the chicken breasts with salt, pepper, and paprika.

Cook the Chicken:

  • Heat 1 tablespoon of olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
  • Once the skillet is hot, add the chicken breasts and cook for 4-6 minutes on each side, until golden brown and cooked through (internal temperature should reach 165°F/74°C).
  • Remove the chicken from the skillet and set aside, keeping it warm.

Make the Sauce:

  • In the same skillet, add ½ cup of chicken broth and, if using, ½ cup of white wine. Let it simmer for 1-2 minutes to reduce slightly.
  • Stir in ½ cup of heavy cream, 1 tablespoon of Dijon mustard, and 1 tablespoon of lemon juice. Cook for another 2-3 minutes until the sauce thickens.

Add Crab Meat:

  • Gently fold in 1 cup of lump crab meat and ¼ cup of shredded Parmesan cheese. Cook for 2-3 minutes until the crab is heated through and the cheese melts into the sauce.

Combine Chicken and Sauce:

  • Return the cooked chicken breasts to the skillet, spooning the creamy crab sauce over the top.
  • Let everything simmer together for another 2-3 minutes, ensuring the chicken is fully coated in the sauce.

Serve:

  • Garnish the dish with freshly chopped parsley and serve.
