  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cup sugar snap peas, halved
  • 3 green onions, sliced
  • 2 cups cooked shredded chicken Use rotisserie chicken for convenience.
  • 1/2 cup roasted cashews
  • 1/4 cup chopped cilantro
  • 1 tablespoon sesame seeds (optional)

Dressing Ingredients

  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 tablespoon grated fresh ginger
  • 1 clove garlic, minced
  • 2 tablespoons olive oil

Instructions
 

Preparation

  • Gather all your fresh ingredients.
  • In a large mixing bowl, combine the shredded green cabbage, red cabbage, shredded carrots, thinly sliced red bell pepper, halved sugar snap peas, and sliced green onions.
  • Add the cooked shredded chicken and mix.
  • Introduce the roasted cashews and chopped cilantro.

Dressing

  • In a small bowl or jar, combine the rice vinegar, soy sauce, sesame oil, honey, grated ginger, minced garlic, and olive oil.
  • Whisk or shake vigorously until well blended.

Assembly

  • Pour the dressing over the salad mixture and toss gently to coat.
  • Sprinkle with sesame seeds if desired.

Serving

  • Serve immediately or chill for about 30 minutes to allow flavors to meld.
