Ingredients
  

Chicken Bacon Pasta

  • 2 cups chicken breast or thighs diced into bite-sized pieces
  • 6 slices bacon strips chopped into small pieces
  • 300 grams pasta penne, fettuccine, or preferred type
  • 1 cup heavy cream
  • 3 cloves garlic minced
  • 1/2 cup Parmesan cheese freshly grated
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • 2 tablespoons fresh parsley chopped for garnish

Instructions
 

  • Bring a large pot of salted water to a boil. Cook pasta until al dente, about 8-10 minutes. Drain, reserving 1 cup of pasta water.
  • Heat a large skillet over medium heat. Cook chopped bacon until crispy. Remove bacon and set aside.
  • Using bacon fat, cook diced chicken until golden and cooked through, about 6-8 minutes. Remove and set aside with bacon.
  • Sauté minced garlic in olive oil until fragrant, about 1 minute. Pour in heavy cream and stir gently.
  • Add Parmesan cheese gradually, stirring until melted and sauce thickens. Season with salt and pepper.
  • Return chicken and bacon to skillet. Add drained pasta and toss gently. Use reserved pasta water to loosen sauce if needed.
  • Finish with fresh parsley garnish and serve immediately.

Notes

Feel free to add veggies like spinach or mushrooms or spice it up with red pepper flakes for variation.
