Chicken Avocado Melt Sandwich

  • 2 slices slices of your favorite bread Choose any type you prefer.
  • 1 breast cooked chicken breast, shredded or sliced Ensure chicken is pre-cooked.
  • 1 ripe avocado Choose a perfectly ripe avocado.
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice) Feel free to experiment with different types.
  • 1 tablespoon mayonnaise (optional) Adds flavor and a golden crust when grilled.
  • to taste pinch Salt and pepper Adjust according to preference.
  • to taste garnish Fresh cilantro or parsley Optional, for garnish.
  • as needed Olive oil or butter For grilling the sandwich.

Instructions
 

Preparation

  • Prepare the chicken. If not using pre-cooked chicken, cook a chicken breast until it reaches an internal temperature of 165°F, then allow it to cool before shredding or slicing.
  • Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork and season with salt and pepper to taste. Add lemon juice if desired.

Cooking

  • Heat a skillet over medium heat and add a thin layer of olive oil or butter.
  • Spread mayonnaise on one side of each slice of bread, if using.
  • Layer one slice of bread in the skillet with the mayonnaise side down.
  • Spread a layer of mashed avocado on the bread, followed by the shredded chicken and then sprinkle with cheese.
  • Top with the second slice of bread, mayonnaise side facing up.
  • Grill for about 4-5 minutes until golden brown, pressing gently with a spatula.
  • Carefully flip the sandwich and grill the other side for another 4-5 minutes, or until the cheese melts and the bread is toasted.
  • Remove from skillet and allow to cool slightly before slicing in half.

Serving

  • Garnish with fresh herbs if desired and serve warm.

Notes

Wrap sandwiches tightly in plastic wrap to store. Refrigerate for up to two days or freeze for best quality within a month. Reheat in a skillet over medium-low heat to maintain texture.
