Ingredients
  

For the sandwich

  • 2 pieces boneless skinless chicken breasts
  • to taste Salt and pepper
  • 1 tablespoon olive oil for cooking chicken
  • 1 piece avocado, sliced ripe but firm
  • 4 slices cheese (Swiss, cheddar, or provolone) use your preference
  • 4 slices bread (sourdough, ciabatta, or your choice) for grilling
  • 2 tablespoons mayonnaise for spreading
  • 1 tablespoon Dijon mustard for spreading
  • 1 small red onion, thinly sliced
  • 1 piece tomato, sliced
  • as needed butter or olive oil for grilling

Instructions
 

Preparation

  • Season the chicken breasts with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat.
  • Cook the chicken for 6 to 7 minutes on each side or until juices run clear. Remove and let rest.
  • Slice the avocado, red onion, and tomato while the chicken rests.

Assembly

  • Spread mayonnaise and Dijon mustard on each slice of bread.
  • On two slices, layer the chicken, avocado, cheese, red onion, and tomato.
  • Top with the remaining bread slices, mayo side down.

Grilling

  • Heat a skillet or grill pan with butter or olive oil over medium heat.
  • Grill the sandwiches for about 3 to 4 minutes per side until golden and cheese is melted. Press with a spatula to ensure even toasting.
  • Remove from heat, let cool slightly, and slice diagonally before serving.

Notes
