Sandwich Ingredients

  • 1 cup cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 ripe avocado mashed avocado Ensure it is perfectly ripe.
  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to use other cheese varieties.
  • 4 slices of bread Sourdough or whole grain are great choices.
  • 2 tablespoons mayonnaise Can be adjusted to taste.
  • to taste Salt and pepper Season to your liking.
  • to taste Butter for grilling Use as needed for grilling.

Instructions
 

Preparation

  • In a mixing bowl, combine shredded chicken, mashed avocado, and mayonnaise. Season with salt and pepper, and mix until well combined.

Assembly

  • Spread the chicken and avocado mixture onto two slices of bread. Sprinkle shredded cheese on top and cover with the remaining slices of bread.

Cooking

  • Heat a skillet over medium heat and add butter. Once melted, place sandwiches in the skillet.
  • Grill each side for 3 to 4 minutes until golden brown and crispy. Add more butter if needed.
  • Check if the cheese has melted and everything is warmed through, which should take another 3 to 4 minutes.

Serving

  • Once both sides are perfectly golden and cheese melted, remove from the skillet and serve warm, optionally with a side salad or fries.

Notes

Consider adding greens like spinach or using garlic powder for enhanced flavor. Store leftovers wrapped in plastic wrap or in an airtight container.
