Ingredients
  

For the Soup

  • 2 tablespoons olive oil
  • 1 pound chicken breast
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 large carrots, sliced
  • 3.5 cups chicken bone broth
  • 2 cups milk
  • 2 teaspoons salt
  • 0.5 teaspoon pepper
  • 1 teaspoon dried parsley
  • 0.5 teaspoon sage
  • 0.5 teaspoon thyme

For the Dumplings

  • 1 cup sourdough discard
  • 1 tablespoon milk
  • 1 teaspoon salt
  • 1.5 cups all-purpose flour
  • 1 tablespoon baking powder

Preparation

  • Chop the onion, mince the garlic, and slice the carrots.

Cooking the Soup

  • In a large pot over medium heat, warm the olive oil and sauté the diced onion until it becomes translucent.
  • Add the minced garlic and let it cook for another minute until fragrant.
  • Introduce the sliced carrots and chicken breast to the pot, cooking them until the chicken is slightly browned.
  • Pour in the chicken bone broth and bring the mixture to a gentle simmer.
  • Season with salt, pepper, dried parsley, sage, and thyme.
  • Cook for 15-20 minutes until the chicken is fully cooked and shreds easily.

Assembling the Soup

  • Remove the chicken breast from the pot, shred it into bite-sized pieces, and return it to the soup.
  • Add milk to enhance the broth's creaminess, keeping on low heat.

Making the Dumplings

  • In a separate bowl, combine sourdough discard, flour, baking powder, milk, and salt to form a soft dough.
  • If too sticky, add a bit more flour until the desired consistency is reached.
  • Drop spoonfuls of the dumpling dough into the simmering soup, ensuring not to overcrowd the pot.
  • Let them simmer uncovered for about 10-15 minutes, or until cooked through and fluffy.

Serving

  • Ladle the steaming soup into bowls and garnish with additional dried parsley or fresh herbs if desired.

Use high-quality chicken bone broth for better flavor. Ensure your dumpling dough isn't too dry for soft, fluffy dumplings. Variation options include adding peas, corn, or using turkey instead of chicken.
