For the Chicken and Gravy

  • 4 pieces chicken thighs, skinless and boneless Tender and flavorful cut.
  • 2 tablespoons olive oil For cooking the chicken.
  • 4 cloves garlic, minced Adds aromatic flavor.
  • 1 piece onion, finely chopped For the base flavor.
  • 2 cups chicken broth To create the gravy.
  • 1 teaspoon dried thyme Herb for seasoning.
  • 1 teaspoon dried rosemary Herb for seasoning.
  • Salt and pepper to taste For seasoning.

For the Cheesy Mashed Potatoes

  • 4 medium potatoes, peeled and diced Base for the mashed potatoes.
  • 1/2 cup milk For creaminess.
  • 1/2 cup shredded cheese (cheddar or your choice) For added flavor.
  • 2 tablespoons butter Adds richness to the mash.

Instructions
 

Preparation of Chicken

  • Heat the olive oil in a large skillet over medium heat.
  • Season the chicken thighs with salt and pepper, then add them to the skillet. Cook until golden brown, about 5-7 minutes per side. Remove and set aside.
  • In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  • Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the dried thyme and rosemary.
  • Return the chicken to the skillet, cover, and let it simmer on low heat for about 20 minutes, or until the chicken is cooked through.

Preparation of Mashed Potatoes

  • While the chicken cooks, boil the diced potatoes in salted water until tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot. Add the butter, milk, and cheese, then mash until smooth and creamy. Adjust seasoning with salt and pepper.

Final Preparation

  • Once the chicken is done, remove it from the skillet and set it aside once again.
  • Increase the heat to medium-high and let the gravy reduce for about 5 minutes, allowing it to thicken.
  • Serve the chicken topped with the garlic gravy alongside a generous portion of cheesy mashed potatoes.
