  • 1 cup brown sugar, packed
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar
  • ½ cup chocolate chips or dried fruits Optional mix-ins.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, combine rolled oats, flour, baking soda, and salt; mix well.
  • In another bowl, beat together the softened butter and brown sugar until creamy.
  • Add the egg and vanilla extract to the butter mixture, mixing until well combined.
  • Gradually add the dry oat mixture to the wet ingredients, stirring until just combined.
  • Fold in any optional chocolate chips or dried fruits.
  • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.

Baking

  • Bake for 10-12 minutes, until the edges are golden brown and centers are slightly soft.
  • Remove from the oven and cool on the baking sheet for a few minutes before transferring to a wire rack.
