Ingredients
  

For the cookie dough

  • 1/2 cup unsalted butter, softened Ensure butter is at room temperature
  • 2/3 cup light brown sugar
  • 1/8 cup white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 3/4 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 1/2 cups quick cooking oats
  • 1 cup chocolate chips

Preparation

  • In a large mixing bowl, combine the softened unsalted butter, light brown sugar, and white sugar. Cream together until smooth and creamy.
  • Add the egg and vanilla extract to the creamed mixture and mix until well combined.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the quick cooking oats and chocolate chips.
  • Chill the dough in the refrigerator for at least one hour.

Baking

  • Preheat the oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • Scoop the chilled dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
  • Bake for about 13 minutes, until the edges are golden but the centers are still slightly underbaked.
  • Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes
