  • 1 cup unsalted butter, melted
  • 2 cups brown sugar
  • 1/2 cup Biscoff cookie spread
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup Biscoff cookies, chopped (optional) for added texture and flavor

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easy removal.
  • In a large mixing bowl, combine the melted butter and brown sugar. Mix well until the mixture is smooth and glossy.
  • Add the Biscoff cookie spread to the butter and sugar mixture. Stir until well combined. The mixture will be thick.
  • Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture. Stir until just combined; do not overmix. Fold in the chopped Biscoff cookies if using.
  • Pour the batter into the prepared baking pan and spread it evenly.

Baking

  • Bake for 25-30 minutes, until the edges are set but the center still looks slightly underbaked. This will help ensure a chewy texture.
  • Allow the blondies to cool in the pan for at least 20 minutes. Once cooled, lift them out using the parchment paper and cut into squares.
