  • 1 bag Hash browns (Frozen) Saves you time.
  • 4 cups Chicken or vegetable broth Opt for low-fat broth to lighten the load.
  • 8 oz Cream cheese Provides a rich, creamy texture.
  • 2 cups Shredded cheddar cheese Feel free to experiment with different cheeses.
  • 1 medium Onion Chopped finely for enhanced flavor.
  • 2 cloves Garlic Minced for extra depth.
  • 1 tsp Salt Adjust based on your taste preferences.
  • 1 tsp Pepper Add more or less to suit your palate.

Preparation

  • Chop the onion and mince the garlic.
  • Measure out your hash browns and cheese for easy access later.

Cooking

  • In a large pot over medium heat, add a teaspoon of oil if preferred and toss in the chopped onion. Sauté for about 3–4 minutes until translucent.
  • Add minced garlic and cook for an additional minute.
  • Pour in the hash browns, stirring to combine and toast for a minute.
  • Add the chicken or vegetable broth and mix well. Bring to a gentle simmer.
  • Sprinkle salt and pepper to taste, and let it cook for 15-20 minutes or until hash browns are tender.
  • Cut the cream cheese into small chunks and add it to the soup, stirring until melted.
  • Fold in the shredded cheddar cheese until melted.
  • Adjust seasoning if necessary before serving.
