Ingredients

  • 2 cups cooked chicken, shredded or cubed
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend) Use a blend for more complex flavor.
  • 4 large flour tortillas
  • 1/4 cup hot honey
  • 1 tablespoon olive oil For cooking.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: chopped green onions or cilantro for garnish

Preparation

  • In a large bowl, mix the cooked chicken with hot honey, garlic powder, onion powder, salt, and pepper. Ensure the chicken is well coated in the mixture.
  • Heat a large skillet over medium heat and add a drizzle of olive oil.

Cooking

  • Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
  • Spread half of the chicken mixture on top of the cheese.
  • Fold the tortilla in half to cover the filling.
  • Cook for about 3-4 minutes until the bottom is golden brown and the cheese begins to melt.
  • Flip the quesadilla carefully and cook for another 3-4 minutes until both sides are golden and crispy.
  • Remove from the skillet and let it rest on a cutting board for a minute.
  • Repeat the process with the remaining tortillas and filling.
  • Cut the quesadillas into wedges and serve hot.

Notes

For extra flavor, serve with guacamole, salsa, or a sour cream dip. Garnish with fresh herbs for added color and flavor.
