  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups diced potatoes (Russet or Yukon Gold)
  • 4 cups beef broth (low-sodium optional)
  • 1 cup shredded cheddar cheese (plus extra for garnish)
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • ½ teaspoon salt to taste
  • ¼ teaspoon pepper to taste
  • 2 tablespoons olive oil

Preparation

  • Heat the olive oil in a large soup pot over medium heat.
  • Add the chopped onions and sauté until softened, about 3-4 minutes.
  • Toss in the minced garlic and cook for another 30 seconds, stirring continuously.
  • Add the ground beef, breaking it apart, and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  • Incorporate the diced potatoes, dried thyme, salt, and pepper. Pour in the beef broth and stir to combine.
  • Bring the mixture to a boil, then reduce heat to low and cover. Let it simmer for about 15-20 minutes until potatoes are tender.
  • Stir in the heavy cream and gradually add the shredded cheddar, stirring until melted.
  • Allow the soup to simmer for an additional 2-3 minutes before serving.
  • Ladle into bowls and garnish with extra cheddar and chopped green onions if desired.
