Ingredients
  

Main Ingredients

  • 4 cups cooked rice Recommended to use leftover rice.
  • 2 cans diced green chilies (4 oz each)
  • 1 cup sour cream
  • 1 cup shredded Monterrey Jack or pepper jack cheese Use for mixing in the dish.
  • 2 cups shredded cheddar cheese Divide; reserve 1 cup for topping.
  • 1-2 tablespoons chopped fresh cilantro For garnish and added flavor.
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 dash cayenne pepper (optional) Adjust for spice preference.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine cooked rice, diced green chilies, sour cream, Monterrey Jack cheese, 1 cup of the shredded cheddar cheese, chopped cilantro, salt, pepper, and cayenne pepper (if using).
  • Mix thoroughly with a spatula to ensure all ingredients are well combined.
  • Grease a 2-quart baking dish and pour the rice mixture into it, spreading evenly.

Baking

  • Cover the baking dish with foil and bake for about 25-30 minutes.
  • After baking, remove the foil and sprinkle the reserved cup of cheddar cheese on top.
  • Broil for about 2 minutes, watching closely to melt the cheese.

Serving

  • Garnish with additional chopped cilantro before serving.

Notes
