Ingredients
  

For the cookie dough

  • 1 cup unsalted butter, softened Bring to room temperature for easier mixing.
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract Adds flavor to the dough.
  • 2 large eggs Room temperature works best.
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda For leavening.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  • Mix in vanilla extract and eggs until fully combined.
  • In another bowl, combine the all-purpose flour and baking soda.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Assembly

  • Scoop a portion of the cookie dough and flatten it in your hand.
  • Add a spoonful of cheesecake filling (not provided in article, can be prepared beforehand) in the center and cover with more cookie dough, sealing the edges.
  • Place on a baking sheet lined with parchment paper.

Baking

  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden.
  • Allow to cool slightly before transferring to a wire rack.
