Ingredients
  

Base ingredients

  • 2 tablespoons butter For sautéing
  • 1 medium onion, chopped To build flavor
  • 2 cloves garlic, minced Adds aromatic base
  • 2 cups vegetable broth Use low-sodium if preferred

Cheese and Cream

  • 4 cups shredded cheese (cheddar or your preference) Choose quality cheese for better melting
  • 1 cup heavy cream Can substitute with milk or plant-based cream

Seasoning

  • to taste Pepper

Serving

  • as needed Croutons For topping before serving

Preparation

  • Melt the butter in a large pot over medium heat.
  • Add the chopped onion and minced garlic, sauté for about 5 minutes until softened.

Cooking

  • Pour in the vegetable broth and bring to a gentle simmer.
  • Gradually add the shredded cheese, stirring until melted and smooth.
  • Stir in the heavy cream and season with salt and pepper to taste.
  • Ladle the soup into bowls and top with croutons.

Notes

For a thicker soup, add a slurry of cornstarch and water or pureed vegetables. Store leftovers in an airtight container for 3-4 days.
