Ingredients

  • 4 large potatoes (Russet or Yukon Gold), peeled and diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 2 cups shredded sharp cheddar cheese
  • 1 cup heavy cream (or half-and-half)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter

Instructions
 

Preparation

  • Peel and dice the potatoes into uniform chunks, about one inch in size.
  • Chop the onion and mince the garlic.

Cooking

  • In a large pot, heat two tablespoons of olive oil or butter over medium heat.
  • Add the diced onions and sauté for about five minutes until translucent.
  • Stir in the minced garlic and let it sauté for about a minute until fragrant.
  • Add the diced potatoes and broth to the pot, bring to a boil, and then reduce heat to simmer for approximately 20 minutes or until the potatoes are fork-tender.
  • Using an immersion blender, puree the soup until smooth, or transfer in batches to a traditional blender.
  • Stir in the heavy cream and shredded cheddar cheese until melted and well blended.
  • Season with salt, pepper, chopped parsley, and fresh thyme, and simmer for an additional 5-10 minutes.

Notes
