  • 1/2 cup cream cheese, softened Ensure it’s at room temperature for easy blending.
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Optional Add-Ins

  • 1/2 cup chopped walnuts or pecans Add for crunch; can be omitted.
  • 1/2 cup raisins Add for sweetness; can be omitted.
  • 1 cup finely grated carrots Use fresh carrots for best flavor.

Preparation

  • In a large mixing bowl, combine the heavy cream, whole milk, and sugar. Whisk until the sugar dissolves completely.
  • Add the softened cream cheese, vanilla extract, ground cinnamon, ground nutmeg, and salt to the bowl. Use an electric mixer or a whisk to blend everything until smooth, ensuring the cream cheese is fully integrated.
  • Stir in the finely grated carrots, mixing well to distribute them evenly throughout the mixture.
  • If desired, fold in the chopped nuts and raisins for added texture and flavor.

Churning

  • Pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  • Transfer the churned ice cream to an airtight container. Smooth the top with a spatula, and place it in the freezer to firm up for at least 4 hours, or until completely frozen.

Serving

  • Once frozen, scoop out the Carrot Cake Ice Cream and enjoy in bowls or cones.
