  • 1 box lemon cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 cup powdered sugar for coating

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the lemon cake mix, eggs, vegetable oil, lemon zest, and vanilla extract. Stir until the batter is well mixed and smooth.
  • Chill the dough in the refrigerator for about 30 minutes to help the cookies hold their shape while baking.

Baking

  • After chilling, scoop tablespoon-sized portions of the dough and roll them into balls.
  • Roll each ball in powdered sugar, covering them completely.
  • Place the sugar-coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes, until the cookies are puffy and the edges are slightly golden.
  • Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
