Ingredients
  

Main Ingredients

  • 2 large chicken breasts (or thighs) Thighs provide richer flavor and moistness.
  • 2 cups white beans (cannellini or great northern)
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning Adjust according to spice preference.
  • 4 ounces cream cheese
  • 0.5 cup heavy cream
  • 1 tablespoon lime juice Adds brightness.
  • 0.25 cup fresh cilantro, chopped For garnish.
  • Salt and pepper to taste
  • 1 tablespoon olive oil For sautéing.

Instructions
 

Preparation

  • Season the chicken with salt, pepper, and one tablespoon of Cajun seasoning.
  • In a Dutch oven, heat up the olive oil over medium heat.
  • Add the seasoned chicken to the pot and sear until golden brown, about 5-7 minutes on each side.
  • Remove the chicken and set it aside to cool before shredding.

Cooking

  • In the same pot, sauté the onion, garlic, bell pepper, and jalapeño until soft and fragrant, approximately 5 minutes.
  • Pour in the chicken broth and add the white beans along with the remaining Cajun seasoning.
  • Stir and return the shredded chicken to the pot.
  • Allow the chili to simmer for 20-30 minutes.
  • Stir in the cream cheese and heavy cream until melted and smooth.
  • Add lime juice and mix well before serving.

Notes

Serve hot garnished with fresh cilantro, additional jalapeño slices, or a wedge of lime. Store leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for up to 3 months.
