Ingredients
  

Main Ingredients

  • 1 pound dried red beans Soaked overnight
  • 1 cup onion, chopped
  • 1 cup green bell pepper, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1 link smoked sausage, sliced
  • 1 tablespoon Cajun seasoning Adjust to taste
  • 4 cups chicken broth
  • 2 cups cooked rice
  • Salt and pepper to taste
  • Green onions for garnish

Instructions
 

Preparation

  • Rinse and sort through the dried beans, removing any debris or damaged beans.
  • Soak the beans overnight in water.
  • After soaking, drain the beans.

Cooking

  • Place the beans in a crockpot.
  • Add chopped onion, bell pepper, and celery.
  • Introduce minced garlic.
  • Slice the smoked sausage and add it to the pot.
  • Add Cajun seasoning and pour in the chicken broth.
  • Stir everything well to combine and season with salt and pepper.
  • Secure the lid and set the crockpot to cook on low for about eight hours.
  • Check the beans after about seven hours; if they are soft, stir in the cooked rice an hour before serving.

Serving

  • Dish out the Cajun Red Beans and Rice into bowls and garnish with freshly sliced green onions.

Notes

Allow the dish to cool completely before transferring to an airtight container. Can be stored in the refrigerator for up to three days, or frozen for up to three months.
