Ingredients
  

For the Chicken Sandwich

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup buttermilk for marinating the chicken
  • 1 cup all-purpose flour for breading
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • as needed Vegetable oil for frying
  • 4 pieces burger buns
  • as desired leafy lettuce
  • as desired tomato slices
  • as desired pickles optional

For the Garlic Aioli

  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • to taste Salt and pepper

Instructions
 

Preparation

  • Marinate the chicken by combining buttermilk and chicken breasts in a bowl, ensuring the chicken is evenly coated. Let it marinate for at least 1 hour or overnight for best results.
  • Set up the breading station with one bowl for the seasoned flour mixture (flour, Cajun seasoning, paprika, salt, black pepper, garlic powder, and onion powder) and another bowl with leftover buttermilk.
  • Remove each chicken breast from the marinade, letting the excess liquid drip off. Dredge it in the seasoned flour mixture, dip it back in buttermilk, and then back into the flour for a double coating.

Cooking

  • Heat vegetable oil in a large skillet over medium-high heat. Once hot, carefully place each breaded chicken breast into the skillet.
  • Fry for about 5-7 minutes on each side or until golden brown and cooked through, ensuring the internal temperature reaches 165°F.
  • Remove the chicken from the skillet and place it on a paper towel-lined plate to drain excess oil.

Making the Aioli

  • In a small bowl, combine mayonnaise, minced garlic, lemon juice, salt, and pepper. Mix well until smooth and adjust seasoning to taste.

Assembly

  • Spread a generous amount of garlic aioli on the bottom half of each bun.
  • Place the crispy chicken breast on top, add lettuce, tomato slices, and pickles if desired. Place the top bun and serve immediately.

Notes
