Main Ingredients

  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup orzo pasta can be substituted with another small pasta
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper diced (red or yellow)
  • 2 cups chicken broth can use vegetable broth for a vegetarian option

Seasoning

  • 2 tablespoons Cajun seasoning adjust for spice level preference
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper

Others

  • 2 tablespoons olive oil for cooking
  • 2 green onions chopped (for garnish)
  • Fresh parsley chopped (for garnish)

Instructions
 

Preparation

  • Cut the chicken into bite-sized pieces and season with Cajun seasoning, smoked paprika, salt, and pepper.
  • Heat olive oil in a large skillet over medium heat.

Cooking

  • Add seasoned chicken to the skillet and cook for about 5 minutes or until browned on all sides. Remove from the pan and set aside.
  • In the same skillet, sauté chopped onion, minced garlic, and diced bell pepper for 3-4 minutes until tender.
  • Stir in the orzo, ensuring it is well-coat with the vegetable mixture.
  • Pour in the chicken broth and bring to a boil.
  • Add the cooked chicken back into the skillet, mixing until combined.
  • Lower the heat and let it simmer for 10-12 minutes, stirring occasionally, until the orzo is al dente.
  • Taste and adjust seasoning as desired.
  • Garnish with chopped green onions and fresh parsley before serving.
