  • 2 pieces chicken breasts Boneless and skinless
  • 2 tablespoons Cajun seasoning Use generously for authentic flavor
  • 2 tablespoons olive oil For searing the chicken
  • 1 cup bell peppers (sliced) Any color bell peppers will work
  • 1 cup onion (sliced) White or yellow onion is preferred
  • 2 cloves garlic (minced) Adds aromatic flavor
  • 1 cup chicken broth For deglazing the skillet
  • 1/2 cup heavy cream Adds creaminess to the sauce
  • to taste Salt and pepper For seasoning
  • as needed Fresh parsley (for garnish) Chopped, for presentation

Instructions
 

Preparation and Searing Chicken

  • Season the chicken breasts generously with Cajun seasoning, salt, and pepper.
  • Heat olive oil in a medium skillet over medium heat.
  • Sear the seasoned chicken breasts in the hot skillet for about 5 to 7 minutes on each side until golden brown.
  • Remove the chicken from the skillet and let it rest on a plate.

Cooking Vegetables and Sauce

  • In the same skillet, add sliced bell peppers, onion, and minced garlic.
  • Sauté them for a few minutes until they soften.
  • Pour in chicken broth and heavy cream, and stir to combine.
  • Return the seared chicken to the skillet and let it simmer in the sauce for about 10 minutes.

Serving

  • Once the chicken is cooked through, garnish with fresh parsley before serving.
  • Serve warm over rice, pasta, or with a salad.
