  • 1 pound ground beef or turkey Choose your preferred meat.
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes Canned tomatoes work best for flavor.
  • 1 can (8 oz) tomato sauce
  • 4 cups chicken or vegetable broth Use vegetable broth for a vegetarian option.
  • 1 small head cabbage, chopped Chop into bite-sized pieces.
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • 2 tablespoons olive oil For sautéing.

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and minced garlic, stirring occasionally until the onion becomes translucent.
  • Add the ground meat, breaking it into smaller pieces and cook until thoroughly browned, about 5 to 7 minutes. Drain any excess grease if using beef.

Cooking

  • Stir in the diced tomatoes, tomato sauce, and broth, ensuring everything is well-combined.
  • Add the chopped cabbage, dried basil, dried oregano, salt, and pepper.
  • Bring the mixture to a boil over high heat.
  • Once boiling, reduce the heat to low and let the soup simmer for about 30 minutes or until the cabbage is tender, stirring occasionally.

Serving

  • Ladle the soup into bowls and serve hot.
  • Optionally, top with fresh herbs or a dollop of sour cream.

Notes
