  • 2 cups cooked, shredded chicken You can use rotisserie chicken for convenience.
  • 1 can cream of chicken soup
  • 1 cup sour cream Can be substituted with Greek yogurt for a healthier option.
  • 1 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup shredded cheese Cheddar or any preferred cheese.
  • 1 cup crushed crackers Use butter or saltines.
  • ½ cup melted butter
  • to taste Salt and pepper
  • for garnish Fresh parsley Optional, for a pop of color.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked, shredded chicken, cream of chicken soup, sour cream, mayonnaise, garlic powder, onion powder, and half of the shredded cheese. Mix well until everything is combined.
  • Season with salt and pepper to taste.
  • Transfer the chicken mixture into a greased 9x13-inch baking dish, spreading it evenly.
  • In a separate bowl, mix the crushed crackers with melted butter. Stir until the crackers are well-coated.
  • Sprinkle the buttered cracker mixture evenly over the chicken layer in the casserole.
  • Top the casserole with the remaining shredded cheese.

Baking

  • Cover the dish loosely with aluminum foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown and bubbly.
  • Let it cool for a few minutes before serving.
