A delightful combination of roasted butternut squash and tart apples, spiced and baked to perfection. A perfect comforting dessert or hearty side dish for autumn gatherings.

  • 1 medium butternut squash, peeled and diced
  • 2 pieces apples, peeled and diced Use a mix of sweet and tart apples for best flavor
  • 1/4 cup brown sugar Adjust to taste
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted Can substitute with vegan butter
  • 1/2 cup chopped pecans or walnuts (optional) Adds crunch and flavor
  • to taste additional cinnamon for sprinkling (optional) For serving

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the diced butternut squash and apples. Toss them lightly to mix.
  • In another bowl, whisk together the brown sugar, cinnamon, nutmeg, and salt. Pour the spice blend over the squash and apples and toss thoroughly.
  • Drizzle the melted butter over the mixture and stir gently until evenly distributed.
  • Fold in the chopped pecans or walnuts if using.
  • Spread the mixture into a greased baking dish evenly.
  • Cover the baking dish with foil.

Baking

  • Bake in the preheated oven for 25 to 30 minutes.
  • Carefully remove the foil and continue baking for an additional 15 to 20 minutes until the squash is fork-tender and the apples are soft.
  • Sprinkle additional cinnamon on top before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Can also be frozen for longer storage.
