Buffalo Tofu Wraps

Ingredients
  

Tofu and Marinade

  • 1 block 450g extra firm tofu, pressed and drained Best for achieving a firm texture.
  • 2 tbsp soy sauce or coconut aminos Use coconut aminos for a soy-free option.
  • 1 tbsp avocado oil Helps in achieving a crispy texture.
  • 2 tbsp cornstarch For creating a crispy coating.
  • 1 tsp thyme Adds flavor to the marinade.
  • 1/4 tsp black pepper For seasoning.
  • 1/4 cup vegan buffalo sauce Adds spice and flavor.

Toppings

  • to taste Vegan ranch dressing
  • 1 cup shredded lettuce For freshness.
  • 4 pieces flatbread, pita, or gluten-free wraps Choose your preferred wrap.
  • 1/2 cup sliced scallions For garnish.
  • 1/4 cup chopped parsley For garnish.

Buffalo Tahini Sauce

  • 2 tbsp tahini
  • 5-6 tbsp hot sauce
  • 1 tbsp maple syrup For sweetness.
  • 1 tbsp apple cider vinegar For tanginess.
  • 1/2 tbsp soy sauce
  • 1/2 small lemon juice For freshness.

Tahini Ranch Sauce

  • 2 tbsp tahini
  • 1 tbsp vegan plain unsweetened yogurt For creaminess.
  • 1/2 tbsp apple cider vinegar
  • 1/2 small lemon juice For freshness.
  • 1/2 tsp garlic powder
  • 1 tsp dry dill
  • 1-2 tbsp water To thin to your desired consistency.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Crumble your pressed and drained tofu into roughly 1-inch chunks.
  • In a mixing bowl, combine the tofu chunks with soy sauce or coconut aminos, avocado oil, cornstarch, thyme, and black pepper. Gently toss until well coated.

Cooking

  • Spread the coated tofu evenly on a lined baking sheet and bake for approximately 25 minutes, flipping halfway through.
  • While the tofu is baking, prepare the Buffalo Tahini Sauce and Tahini Ranch Sauce in separate jars by combining all ingredients and mixing until smooth.
  • Once the tofu is golden and crispy, remove it from the oven, transfer to a bowl, and toss with the buffalo sauce.

Assembly

  • Assemble your wraps by taking a flatbread, spreading a generous amount of vegan ranch dressing, adding shredded lettuce, and several spoonfuls of buffalo-coated tofu. Drizzle more sauce on top if desired.
  • Garnish with sliced scallions and chopped parsley before folding the wrap.
  • Serve on a platter and enjoy!
