For the Sweet Potatoes

  • 2 large sweet potatoes These serve as the base for the bowl.

For the Buffalo Chicken

  • 1 pound chicken breast, diced Can be substituted with turkey or tempeh.
  • 1 cup Buffalo sauce Adjust spice level to taste.
  • 1 tablespoon olive oil For cooking the chicken.
  • 1 teaspoon garlic powder Enhances the flavor of the chicken.
  • to taste Salt and pepper To season the chicken.

For Toppings

  • 1 cup shredded lettuce Adds crunch to the bowl.
  • 1 cup cherry tomatoes, halved Brings freshness.
  • 1 1 avocado, sliced Provides creaminess.
  • ½ cup blue cheese crumbles (optional) Adds a tangy flavor.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and pierce the sweet potatoes with a fork. Place them on a baking sheet lined with parchment paper and roast in the oven for about 45 minutes, or until tender.

Cooking the Chicken

  • While the sweet potatoes cook, heat olive oil in a skillet over medium heat. Add the diced chicken breast, and season with garlic powder, salt, and pepper.
  • Cook until the chicken is browned and cooked through, about 7-10 minutes.
  • Pour the Buffalo sauce over the cooked chicken and stir to combine. Let it simmer for a few minutes.

Assembly

  • Once the sweet potatoes are done, remove them from the oven. Let them cool for a few minutes, slice them open, and scoop some flesh out.
  • Fill each sweet potato with the Buffalo chicken mixture.
  • Top with shredded lettuce, cherry tomatoes, avocado slices, and blue cheese if using. Garnish with fresh cilantro or parsley.

  • Serve immediately, and enjoy your flavorful bowl!
