Ingredients
  

  • 2 cups cooked shredded chicken use leftover rotisserie or freshly poached chicken
  • 8 ounces pasta penne or rotini recommended
  • 1/2 cup buffalo wing sauce adjust heat level to preference
  • 1 cup cream cheese adds richness and smooth texture
  • 1/2 cup shredded cheddar cheese for a sharp, tangy finish
  • 1/4 cup ranch or blue cheese dressing balances the heat with creaminess
  • 2 cloves garlic minced
  • to taste salt and pepper
  • chopped green onions or celery optional garnish for crunch and freshness

Instructions
 

  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet over medium heat, sauté the minced garlic until fragrant, about 1 minute.
  • Add the shredded chicken and buffalo wing sauce to the skillet. Stir to coat evenly.
  • Stir in the cream cheese and shredded cheddar cheese. Continue stirring until the cheeses melt and form a smooth sauce.
  • Toss the cooked pasta into the skillet with the buffalo chicken mixture. Mix gently to coat every piece.
  • Stir in the ranch or blue cheese dressing for a cool contrast to the spice.
  • Season with salt and pepper to taste. Garnish with chopped green onions or celery if desired.

Notes

You can easily customize this dish by adding veggies like spinach or bell peppers or adjusting the spice level to your liking.
